Organization: The Organisation, is a European style patisserie (premium cake selling company) created by an IIM professor to disrupt the cake and coffee market, established to spread bonafide taste of the streets of Manhattan across the world. Brought into the world from a love for baking, the desire to create a meeting place that serves delicious food with a warm rustic environment. The Organization offers a full scope of Breads, morning merchandise, cakes, baked and savoury goods. Currently the team size is of about 200 people with more than 15 outlets across Hyderabad, along with a plan of opening 100 new outlets across Goa, Vijayawada, Bangalore, Chennai scaling up to 1000 people over the next year.
Designation: Executive Bakery Chef & Factory Head
Experience: Minimum 8+ years of Pastry Chef Experience with high volume food production, able to produce all baked goods including but not limited to artisan breads and rolls, muffins, laminated Danish, laminated croissants and doughnuts, Macarons, Focassia bread, banana breads etc.
Office Location: Nanakramguda (Hyderabad, Telangana)
Qualification: High school diploma or 3-year experience in the culinary, food and beverage, or related professional area or 2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or related major.
Salary: Negotiable as per Expertise and Market Norms.
Responsibilities
1. Manages all day-to-day operations of the pastry and bakery section of the kitchen (Involved in Production Planning).
2. Prepare a wide variety of goods such as cakes, cookies, pies, bread etc. following traditional and modern recipes (Innovation through latest food technologies).
3. Able to produce all baked goods including but not limited to artisan breads and rolls, muffins, laminated Danish, laminated croissants and doughnuts, Macarons, Focassia bread, banana breads etc (Define SOP’s for easier replication and scale).
4. Able to develop, designs, or creates new ideas and items for Pastry Kitchen and coordinates activities of cooks and workers engaged in food preparation. Supervise and coordinate all pastry and dessert preparation and presentation.
5. Checks the quality of raw and cooked food products to ensure that standards are met and assists in determining how food should be presented and creates decorative food displays.
6. Monitor stocks for baking ingredients such as flour, sugar etc. and make appropriate orders within budget and Check quality of material and condition of equipment and devices used for cooking. Report all equipment problems and maintenance issues, known safety hazards, or unsafe practices and procedures to management immediately.
7. Must possess a positive attitude and have the ability to work with a variety of people and in cooperation with co-workers efficiently and effectively.
8. Able to recognize superior quality products, presentations and Flavors.
9. Ensures compliance with all applicable laws and regulations, Operates and maintains all department equipment and reports malfunctions.
10. Maintains cleanliness and organization in all work areas and Ensure compliance with food hygiene and Health and Safety standards.
11. Encourages and builds mutual trust, respect, and cooperation among team members and serves as a role model to demonstrate appropriate behaviours.
12. Maintain a lean and orderly cooking station and adhere to health and safety standards by ensuring Culinary Standards and Responsibilities are Met for Pastry Team.
Skills Required:
1. Proven experience as Pastry Chef, baker or relevant role
2. Great attention to detail and creativity
3. Organizing and leadership skills and possess professional disposition with good communication and interpersonal skills.
4. Willingness to replenish professional knowledge
5. In depth knowledge of sanitation principles, food preparation and baking techniques and nutrition
6. Working knowledge of baking with ingredient limitations (pastries that are gluten free, sugarless etc.)
7. Certificate in culinary arts, pastry-making, baking or relevant field
8. Ability to work a variety of shifts including weekends, days, afternoons and evenings.
Job Type: Full-time
Salary: ₹1,000,000.00 – ₹1,200,000.00 per year
